Banana Bread (Nut Free!)

For anyone with kids with food allergies, you know how important it is to find good baking recipes! My son loves banana bread, but it is difficult to trust bakery goods (if your child has peanut and tree nut allergies like mine). So I was lucky to find this super easy to make banana bread recipe, with no nuts!

3-4 ripe bananas
1/3 cup melted butter
3/4 cup sugar
1 egg beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 1/2 cups flour (I sometimes make the 1/2 cup wheat)

Preheat oven to 350. Grease loaf pan. Mash bananas, mix in butter, then mix in sugar, egg, baking soda, salt and vanilla (I sometimes don't add the salt, especially if I'm cooking with salted butter). Add the flour last. Cook for 1 hour.

  1. OOh, that sounds great and easy! I have some bananas, I was going to make those mini muffins, but I may make this instead, and throw in the last of my blueberries!
